The price of this condiment, which usually accompanies sushi or sashimi, is one of the most expensive in the world. The sauce is made from a Japanese plant called eutrema japonicum (or Japanese radish) with unique characteristics. It is, in fact, one of the most difficult shrubs to grow in the world.
The plant is found along mountain streams in Japan and, to grow in health, it needs numerous conditions : a constant supply of spring water, shady areas and rocky soils is essential. Furthermore, the temperature must be between 8 and 20 degrees throughout the year.
So what is the wasabi that we eat often and that accompanies our beloved sushi made up of? It is a substitute that contains horseradish, dyes and sweeteners , in which probably, if we are lucky, only a small percentage of the real wasabi plant is present (usually between 1 and 5% of the total).
